Sweet potatoes are one of the healthiest vegetables you can eat!  They are excellent sources of vitamins A and C. and are often confused with yams, but yams are much larger, starchy roots grown in Africa. OK these fries taste GREAT your family will LOVE THEM and they are actually GOOD FOR YOU!

Ingredients for Sweet Potato Fries

1 Sweet potato per person

2. Spray non stick cooking spray

3. Salt and pepper or seasoned salt or cinnamon (it depends on the flavor you like best).

Directions!

Preheat the oven to 425F

1. Wash sweet potatoes.

2. Peel Sweet Potato (this works better if you steam them for 4 minutes first but its not necessary).

3. Slice lengthwise into ¼ inch strips

4. Place strips single layer on 18 x 26 x 1” baking tray that has been lightly sprayed

6. Spray the tops of the sweet potato fries with butter  lightly

7. Sprinkle the seasoning (cinnamon,salt and pepper, or seasoned salt) over tops of the sweet potato fries

8. Bake the sweet potato fries in 425°F oven for approximately 20 minutes

9. remove from oven and serve!

Recipe #2 Oven Baked Sweet Potatoes!

Preparation

Preheat the oven to 375F

Before you start you will want to wash sweet potatoes well. This recipe will have you cook them whole as most of the nutrients are next to the skin and it is easier to cook them like this!

Punch some hole sin the sweet potato with a fork (just like with a regular potato this lets the steam escape as they cook so they don’t explode and make a mess!)

Cooking the Sweet Potato in the oven.

Place potatoes in any oven safe pan

Cook in an oven heated to 375° F for about 45 minutes or until tender.

Remove from oven and allow to cool slightly before removing skins.

Season and Serve

Slice each potato in the middle and add some butter.

Sprinkle with salt and pepper

Serve as a meal itself or with a main dish – Sweet potato goes great with any meat but is traditionally served with Turkey or Ham
